This Colombian decaf from Quills Coffee proves that removing caffeine doesn't mean sacrificing flavor. Processed using the Sugarcane Method—where naturally derived ethyl acetate gently bonds with and extracts caffeine—this coffee retains the brightness and complexity of its fully caffeinated counterparts. Sourced from smallholder farmers in Colombia's high-altitude growing regions between 1,400 and 1,600 meters, it's a clean, washed-process coffee that tastes like red fruits, hazelnut, and chocolate.
The Sugarcane Process is one of the most flavor-preserving decaffeination methods available. Ethyl acetate, derived from fermented sugarcane, is a naturally occurring compound that selectively targets caffeine molecules while leaving the coffee's inherent flavors intact. The green beans are steamed to open their pores, then bathed in a water and EA solution over eight hours until caffeine is no longer detectable.
